Why not try this unusual but surprisingly tasty ‘cauliflour’ pizza base. You can add toppings according to your favourite flavours. Finally, pizza can become a healthy option for dinner!
Ingredients
2 cups grated cauliflower
2 cups mozzarella cheese
2 eggs lightly beaten
2 tsp dried oregano
2 cloves crushed garlic
1 pinch salt
Olive oil for brushing

Directions
Preheat your oven to 400°F (200°C).
Grate the cauliflower using a box grater or pulse it in a food processor until it resembles rice-sized pieces. Microwave the grated cauliflower for about 4–5 minutes, until tender. Allow it to cool slightly. Place the cooked cauliflower in a clean kitchen towel or cheesecloth and squeeze out as much moisture as possible. This step is crucial to ensure a crisp crust.
In a mixing bowl, combine the cauliflower, mozzarella cheese, lightly beaten eggs, oregano, crushed garlic, and a pinch of salt. Mix until everything is well combined and forms a dough-like consistency. Line a baking sheet or pizza pan with parchment paper.
Transfer the cauliflower dough to the pan and press it into your desired pizza shape, about ¼ inch thick.
Brush the top of the crust lightly with olive oil to help it brown and crisp up.
Bake the crust in the preheated oven for 12–15 minutes, or until it turns golden and starts to firm up. Once the crust is baked, remove it from the oven and add your desired pizza toppings (tomato sauce, more cheese, veggies, or meats).
Season with an additional pinch of salt, pepper, or herbs like basil, thyme, or rosemary, depending on your chosen toppings. Return the pizza to the oven and bake for another 8–10 minutes, or until the cheese is melted and bubbly, and your toppings are cooked.
Remove the pizza from the oven and let it cool for a minute or two before slicing and serving.
